Chicken Curry with Light Coconut Milk
Ingredients:
300g diced chicken breast
1 teaspoon curry powder
1/2 onion, chopped
1 clove garlic
1 tablespoon olive oil
1/2 cup light coconut milk
Salt and pepper to taste
Instructions:
Sauté the onion and garlic in the olive oil.
Add the chicken, curry powder, and salt, and sauté well.
Add the coconut milk and cook until the chicken is tender and the sauce thickens.
Serve with brown rice and cooked vegetables.
